Recipe for Braised Cucumbers

by Pliny, Naturalis historiae, book 20, chapter 6

Original recipe: Coctos deraso cortice ex oleo et aceto ac melle iucundiores esse certum est.

Translation: Truly, cucumber, peeled and cooked with oil, vinegar and honey is most enjoyable.


  • 1 large
    cucumberCucumis melo var. chate that is still known as the ‘Italian cucumber’.
  • 3 tbsp white wine vinegar
  • 3 tbsp olive oil
  • 1 tbsp clear honey
  • Sea salt (optional)


  • Peel and cut the cucumber into thick slices.
  • Pour the white wine vinegar, olive oil and honey into a pan and cook the slices of cucumber gently in the sauce until they are tender, shaking the pan occasionally
  • Serve hot as a side dish.
