For the damson sauce
- Dried onion
- Celery seed
- Stoned damsons
- To give the bird a greater flavour and make it more nourishing and keep all the fat in, wrap it in pastry make of oil and flour and cook it in the oven.
- Take pepper, dried onion, lovage, cumin, celery seed, stoned damsons, mulsum, vinegar, liquamen, defrutum and oil.
- Cook together until damsons are tender.
