Roman Recipes: 1000 larks tongues
Okay, not practical, nor likely, but Rich Romans liked it.
Ingredients
- 1000 larks
- Red wine
Preparation
- Catch 1000 larks. They must be caught alive to ensure the meat is fresh. (Slaves are used for this process)
- Kill the birds by breaking their necks.
- Prise open the mouth by folding back the top beak.
- Cut out the tongue.
- Marinate in red wine overnight.
- Strain off the wine and serve.
